These pumpkin pie breakfast popsicles are a fun and healthy way to get your pumpkin fix!
These breakfast pops are made with simple ingredients. Vanilla Greek yogurt (or use plain or if you want them less sweet!), some milk to thin the yogurt out (feel free to use any kind of milk e.g. almond milk), a bit of granola to give these some substance, pumpkin purée (not pumpkin pie filling), honey for a touch of sweetness, and some pumpkin pie spice.
Dessert for breakfast, basically. 🙂
This is my first time making breakfast popsicles. I have to say that whoever thought up the idea is pretty smart. A popsicle is easy to grab and go, and it adds a touch of fun to your mornings.
Mornings are the absolute least favorite time of day for me, so anything that gives me the tiniest glimmer of hope is a good thing!
Pro tip: Use a small spoon (like a teaspoon) to add the pumpkin mixture to the molds. It’s also a good idea to use the spoon to push the layers down a bit (and/or tap the popsicle mold on the counter a few times) to get as many of the air bubbles out as possible. A few air bubbles are inevitable, and it’s not a big thing, but you don’t want any huge gaps or the popsicles may come apart. Other than remembering to do that, these are very straightforward.

Pumpkin Pie Breakfast Popsicles
Ingredients
- 1 cup pumpkin purée
- 1/2 teaspoon pumpkin spice
- 1 tablespoon honey
- 1.5 cups vanilla Greek yogurt
- 1/2 cup milk
- 1/2 cup granola
Instructions
- In a small bowl, combine the pumpkin purée, pumpkin spice, and honey. If you want the mixture a little sweeter, add more honey as needed.
- In another bowl or large measuring cup, combine the yogurt and milk.
- Layer the yogurt, pumpkin mixture, and granola in the popsicle molds until they're filled. I suggest using a small spoon to make this process easier. It's a good idea to look for any air bubbles and push them out with the spoon as you're going along.
- You should be able to add the popsicle sticks since the mixture will be fairly thick, but if you're having issues with them popping out, let the popsicles freeze for about 2 hours then try adding them at that point.
- Freeze the popsicles for at least 6 hours. When they're frozen, you can take them out of a mold and store them in a large ZipLoc.
Notes
- To easily remove popsicles from mold, fill sink with hot water and then carefully immerse the frozen part of the mold in the water for 8-10 seconds.
