These Crockpot honey mustard pork chops are a simple and low-effort way to get a tasty hot dinner on the table that the whole family will love.

Making honey mustard pork chops in the slow cooker is easy. You just mix up the sauce, add it to the slow cooker, cover the pork in the sauce, and let it cook. You then add a little cornstarch at the end to thicken the sauce up a bit. You could brown the pork ahead of time, but that’s extra work. Totally up to you if you want to do that step. 😛

I’m going to state the obvious here, but you just never know sometimes when you post stuff on the internet. This recipe is pretty mustardy. If you don’t like mustard, chances are you won’t like this recipe.

I didn’t find it too sweet either, but then I didn’t put that much honey in. I’m guessing for some people this is one of those recipes that you will want to tweak the second time you make it if the mustard/honey ratio isn’t exactly right for your taste buds.

How long do you cook pork chops in the slow cooker?

I bought fairly thin pork chops and they were fall-apart tender with 3 hours of cooking on high heat. If you were to use thicker and/or bone-in pork chops, they may take a bit longer to get as tender. For this recipe, I suggest 3-4 hours on high or 6-8 hours on low.

What kind of mustard to use?

I used a “sweet” yellow mustard in this recipe. You could definitely use whatever your favorite kind is or even mix a couple varieties together if you wish. I used French’s brand mustard, which is huuuge here in Canada, but I’m not actually sure if they sell it in the States.

Crockpot Honey Mustard Pork Chops

These Crockpot honey mustard pork chops are a simple and low-effort way to get a tasty hot dinner on the table that the whole family will love.

Cook: 3 hours
Total: 3 hours 10 minutes
Servings: 4

Ingredients 

  • 1.5 pounds boneless pork chops
  • 1/2 cup yellow mustard
  • 2 tablespoons liquid honey
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup beef broth
  • Pepper to taste
  • 1 tablespoon cornstarch + 2 tablespoons cold water

Instructions 

  • Add all ingredients except for the pork chops and cornstarch to a bowl and whisk/stir them together until combined. Pour it into your Crockpot.
  • Add the pork and give it a stir to ensure that the pork is mostly covered (ok if it's not all totally submerged in the sauce).
  • Cook on high for 3-4 hours or on low for 6-8 hours.
  • Mix the cornstarch with the cold water and add it to the Crockpot about 15 minutes or so before serving. Stir it in and then put the lid back on your slow cooker and let the sauce thicken up a bit, then serve. 

Notes

  • I tested this recipe with fairly thin boneless pork chops (there were 6 of them in the 1.5 pounds). For thicker, bone-in pork chops, cooking time may vary and/or be on the higher end of the suggested cooking times.
  • You can brown the pork chops ahead of time if you wish, but you don't need to.
  • I used a "sweet" yellow mustard. You could definitely try different varieties of mustard out in this recipe or even combine 2 different kinds (e.g. Dijon with something milder). 
  • Serves 4-6 depending on how much people eat. 
  • This is the 7 quart Crockpot I used to make this recipe.
